Recipe Makeover: Light Pumpkin Mousse

  • 1 package sugar-free Jello vanilla instant pudding
  • 3/4 cup cold skim milk
  • 1/2 cup canned pumpkin
  • 3/4 teaspoon pumpkin-pie spice
  • 3 1/2 cup fat-free Cool Whip

Prepare the pudding as directed on package, with 3/4 cup milk. Add pumpkin, spice, and 2 cups of the whipped topping. Spoon into individual cups or a serving bowl. Chill at least 4 hours. Top with remaining whipped topping before serving. Enjoy!
